Abstract

The book is a very good compilation of information on various aspects of vegetable processing. The same authors have earlier brought out the book 'Commercial Fruit Processing' and both these put together give an overview of the entire fruit and vegetable processing industry and the operations concerned from harvesting to storage of the finished product.
