Abstract
Dietary fibre has been defined as the sum of polysaccharides and lignin which are not digested by the endogenous secretions of the human gastro intestinal tract; this fraction has a variable composition and is made up of several different types of polysaccharides - carbohydrates like cellulose, hemicelluloses and pectic substances, and the non carbohydrate lignin. Tough fibres of meat or fish, which are usually fully digested, are not regarded as dietary fibre.Downloads
