Abstract
In recent years, consumption of carrot and its related products has increased steadily due to the recognition of antioxidant and anticancer activities of β-carotene in carrot. The carrot is widely utilized for making salads, curries, sweets, soups, juices, flakes and pickles but carrot supplemented baby foods are hardly developed. Beetroot, a good source of protein, dietary fibre, important vitamins and minerals, is rich in carbohydrates, free from cholesterol, very low in fat and rich in betaine (phytofactor).Downloads
