Abstract

Legumes form the main protein component of the diets of India, either alone or in combination with cereals. They need to be fully utilized in the efforts to fill the protein gap. Legumes supplying proteins along with other dietary essentials, can be rendered more nutritious, palatable, digestible and tastier by simple processing techniques of which germination is one.
