Abstract

A group of 25 specialists engaged in food research agronomy, agriculture, nutrition, business management, and food engineering have contributed to the volume Potato Processing. Potato is still a major component of food in many countries and its processing is an expanding industry. Full utilization of potato has been well brought out.
