Abstract
This book is an inventory of information on the utilization of unprocessed and simply processed soybeans as human food. It reveals the state of food, uses of soybeans and information on the pattern of soybean consumption around the world. The book also identifies barriers affecting the use of soybeans as food and indicates the research needs to overcome such barriers in developing countries. There is a section in this volume, on developing methods for introducing simply processed soybeans as a direct food for low income segments of the populations of the LDC countries. Data on production and consumption of soybeans in several African and Latin American countries are also included in this inventory report.Downloads
