Abstract
Pulses are an integral part of Indian agriculture. They have abundant amount of lysine, which is the limiting amino acid in cereals and are good sources of energy and other nutrients like protein, carbohydrate, B-complex vitamins and minerals besides containing some toxic substances (saponins, alkaloids, cyanogenic glucosides and heamagglutinins) which interfere with the absorption and utilization of proteins of pulses.Downloads
