Abstract
In this book, "Commercial Fruit Processing" Jasper Guy Woodroof and Bor Shium Luh present a detailed account of the history and growth of fruit processing, fruit harvesting, handling and storing, fruit preparation, seasonal suitability, factors affecting microflora in processed fruits, various methods of preserving fruits, quality composition, nutritive value of raw and processed fruits, storage life of processed fruits and plant sanitation discussed at length with suitable illustrations.
