Abstract
This book comprises up-to-date information on the composition and properties of milk and relates them to modern methods for organising the physical and chemical tests, used in quality control of milk and its products. The detailed discussion of the chemistry of the dairy products and the testing procedures clearly illustrate the reasons for the special conduct of the different tests.
