Abstract

Vitamin A deficiency is a major public health problem in India. It is estimated that 10,000 to 12,000 persons in India, mostly children go blind due to this deficiency. Pre-schoolers (4 to 6 years) the most severe and alarming nutrition deficient sector get their vitamin A through vegetables and fruits. It has been demonstrated that inclusion of green leafy vegetables in their diets results in marked increase in their serum vitamin A concentration.
