Abstract

Guar seed is rich in proteins containing 30 to 35 per cent crude proteins (per cent NX6'25) but its proteins have not so far been classified according to the conventional solubility classification procedure which describes the various fractions: (i) albumins (ii) globulins (iii) prolamins and (iv) glutelins.
