Abstract
Many modern immunological methods have been developed in the study of food materials and food borne contaminants and their effects on the immune system of man. This book namely, ' Immunological Aspects of Foods' tries to give guidelines in this respect. The authors highlight the immuno-chemical aspects of meat proteins, barley seed proteins, wheat proteins, peanut proteins and egg white proteins. Toxic nature of certain plant and animal constituents have been studied in detail. Due emphasis on immunological aspects of staphylococcal enterotoxins, enterotoxins from escherichia coli, fish and shell fish poisons and food borne viruses have been given. Nature and detection of food allergens and oilseed allergens have been discussed. Relation between malnutrition and immunity has been added towards the end of the chapters.Downloads
