Nutritional Evaluation of Winged Bean - Effect of Hepatic Dehydiocenases
Jump To References Section
Abstract
Winged bean (Psophocarpus tetragonolobous L.) a leguminous crop,is a source of high protein and high fat. Like most leguminous seeds, the winged bean is relatively deficient in sulphur containing amino acids and rich in lysine. Winged bean is also known to be associated with certain anti nutritional factors like protease inhibitors, haemagglutinins and saponins. Since winged bean, virtually duplicating soybean, can be grown in varied agroclimatic conditions, has attracted worldwide attention to promote it as a high protein crop.Downloads
