Abstract

Jack fruit (Artocarpus heterophyllus) is one of the most popular fruits of South India. Owing to its numerous culinary uses and its availability in plenty during heavy monsoon rains, jack fruit has earned the name 'poor man's food'. Jack fruit contains carbohydrates, mostly in the form of sugars and is also fair source of carotene, thiamine and riboflavin. The seeds are mostly starchy and good source of B-complex vitamins.
