Abstract

India has recently entered the industry of fruits and vegetable processing. This industry which began in a small way about half a century back has been rapidly advancing. Simultaneous to the increase in production, the consumption of processed foods is also observed to be increasing especially with the increase in the number of urban women taking employment.
