Abstract
Food based strategies are fundamental to long term prevention of vitamin A deficiency. Earlier studies of our laboratories reported the consumption pattern of carotene rich foods in Coimbatore district. Since the cooking/storage processes affect the carotene content of green leafy vegetables, other vegetables and fruits, it was thought of interest to study the methods adopted for storage of carotene rich foods.Downloads
