Abstract

A number of contradictory reports have appeared on the effect of protein quality on storage of vitamin A in the liver. The data of Esh et al showed significantly lower liver stores of vitamin A in rats, maintained for long periods on rice, wheat and pulse diets in comparison with those fed casein.
