Abstract
The supply of an adequate and good quality protein is a basic requirement for the growth and maintenance of the body. The quality of protein in turn is governed by the pattern and quantity of essential amino acids present in it. A large segment of Indian population draws its protein requirements from vegetable proteins particularly cereals and pulses. However, these proteins are reported to be deficient in one or the other essential amino acid. The presence of a single essential amino acid in inadequate quantity decreases the nutritional value of protein markedly.Downloads
